Marmalade lovers will savor this unique flavor.
Assemble these supplies:
- 31/2 cups prepared fruit (3 medium oranges,
- 1 medium lemon,
- 1 1/2 cups water, and 1/2 teaspoon baking soda)
- 1 cup (about 6 ounces) chopped crystallized ginger
- 5 cups (21/4 pounds) sugar
- 1 pouch CERTO® Fruit Pectin
Steps in preparation:
- First prepare the fruit. Remove skins in quarters from 3 oranges and 1 lemon.
- Lay quarters flat; shave off and discard about half the white part.
- With a sharp knife or scissors, slice remaining rind very fine, or chop or grind.
- Place in saucepan; add 11/2 cups water and 1/2 teaspoon baking soda.
- Bring to a boil, cover, and simmer 20 minutes.
- Section or chop peeled fruit; discard seeds.
- Add pulp and juice to rind, cover and simmer 10 minutes longer. Measure 31/2 cups into 6- or 8-quart saucepot. Add ginger.
- Then make the marmalade.
- Thoroughly mix sugar into fruit in saucepot.
- Place over high heat, bring to a full rolling boil, and boil hard I minute, stirring constantly.
- Remove from heat and at once stir in fruit pectin.
- Skim off foam with metal spoon.
- Ladle quickly into hot jars, filling to within 1/4 inch of top.
- Cover and process in boiling water bath for 5 minutes.
- Makes about 6 cups or about 7 (8 fluid ounce) jars.
