Assemble these supplies:
- Large bunch fresh basil, or large bunch fresh parsley combined with 1 tablespoon dried basil
- 1 cup freshly grated Parmesan or Romano cheese 2/3 cup olive oil
- 3 large cloves garlic, peeled
- 2 top sirloin steaks, 3/4 inch thick (about 1 pound each) Salt and freshly ground pepper
- 2 tablespoons unsalted butter
- 1/2 cup sour cream
Steps in preparation:
- Wash fresh basil or parsley and dry thoroughly. Discard thickest stems.
- You should have about 2 cups leaves.
- In blender, purée herbs, cheese, olive oil, and garlic.
- Cut each steak in two and season with salt and pepper to taste.
- In large heavy-gauge skillet, melt butter over medium-high heat.
- Add steaks and cook 3 minutes per side for rare, 4 to 5 minutes per side for medium rare, and 7 to 8 minutes per side for well done.
- Place a dollop of sour cream and another of pesto on each steak, and serve.
