Assemble these supplies:
- 1 bunch Chinese broccoli, preferably, or regular broccoli, (1 1/4 pounds)
- Large onion
- 1/2 pound medium-size mushrooms
- 2 tablespoons peanut or vegetable oil
- 1/4 cup oyster sauce
- 1 teaspoon sugar
- Salt
Steps in preparation:
- Wash broccoli and dry with paper towels. Remove florets and any large leaves, and set aside. Cut stems diagonally into 1- to 11/2-inch lengths.
- Peel onion, slice thinly, and separate into rings. Wipe mushrooms with damp paper towels and cut into 1/4-inchthick slices.
- Bring 1/2 inch water to a boil in large skillet over medium-high heat. Add broccoli stems and cook about 2 minutes, or until almost tender. Add florets and leaves and cook another 30 seconds. Turn broccoli into colander to drain; dry skillet.
- Heat oil in skillet over medium-high heat. Add onions and stir fry just until wilted, about 2 minutes.
- Add mushrooms to skillet and stir fry until tender, about 1 minute.
- Stir in broccoli, oyster sauce, sugar, and salt to taste, and stir fry mixture just until heated through, about 2 minutes. Transfer to serving platter and cover loosely with foil to keep warm.
