Stir-Fried Vegetables



Assemble these supplies:

  • 4 celery stalks
  • Large zucchini and large crookneck, or summer, squash
  • 1 pint cherry tomatoes
  • 2 tablespoons vegetable oil
  • 2 teaspoons soy sauce

Steps in preparation:

  1. Wash and dry celery, zucchini, squash, and cherry tomatoes. 
  2. Cut celery diagonally into  1/2-inch-thick slices. 
  3. Cut zucchini and squash diagonally into 2-inch pieces, then slice into 1/4-inch julienne. 
  4. Halve cherry tomatoes.
  5. In medium-size skillet, heat oil over medium heat. 
  6. Add celery, zucchini, and squash, and stir fry until crisp- tender, about 5 minutes.
  7. Add tomatoes and soy sauce, and continue cooking just until heated through.
