Assemble these supplies:
- 2 tablespoons olive oil
- 2 teaspoons lemon juice
- 1/2 teaspoon dried mixed herbs
- 1/2 teaspoon dried dill
- salt
- freshly ground black pepper
- 175 g (6 oz) monkfish
To garnish:
- 1 tablespoon chopped fresh parsley or dill
Preparation time: 5 minutes, plus marinating
Cooking time: 10 minutes
Steps in preparation:
- Mix together the olive oil, lemon juice, herbs, dill, salt and pepper. Place the monkfish in a shallow dish and pour the marinade over. Leave to marinate for at least 1 hour, turning the fish occasionally.
- Remove the fish from the marinade and reserve the marinade.
- Place the fish under a preheated grill and cook for about 10 minutes, turning once and basting occasionally with the reserved marinade.
- Transfer the fish to a warmed plate and sprinkle with the chopped parsley or dill.
