Assemble these supplies:
- 25 g (1 oz) unsalted butter
- 225 g (8 oz) skate
- 1 teaspoon white wine vinegar
- 1 teaspoon capers, finely chopped
- 1 teaspoon finely chopped gherkin
- salt
- freshly ground black pepper
To garnish:
- gherkin fan
Preparation time: 5 minutes
Cooking time: 12 minutes
Steps in preparation:
- Melt the.butter in a small frying pan and cook the skate for about 10 minutes, turning once.
- Remove the fish from the pan and keep warm.
- Add the vinegar, capers and gherkin to the butter remaining in the pan. Season with salt and pepper and bring to the boil.
- Pour the sauce over the fish.
- Garnish and serve immediately.
