Assemble these utensils:
- kitchen scale
- large kettle
- fine sinamay doth 8-ounce bottles
- 1 1/2 kilo duhat sugar
- water
- citric acid
Steps in preparation:
- Wash Ind sort the fruits.
- Weigh the fruits and add half of its weight‘Of Water.
- Simmer the fruit and water ,f_or 15 minutes.
- Extract juice with a clothbag.
- Repeat steps 2, 3, and 4 to ex¬tract juice for a second time.
- Combine first and second extrac¬tions.
- Clarify the juice by passing through fine sinamay cloth folded 4 times.
- Weigh the juice.
- Add sugar and citric acid to suit taste.
- Simmer juice and fill the bottles hot.
- Seal and pasteurize for 30 minutes.
- Cool, label, and store.
