Assemble these supplies:
- 2 1/2 cups chicken stock or water
- 1 cup brown rice
- 1/2 cup pine nuts (about 2 ounces)
- 1/2 cup dark raisins
Steps in preparation:
- In medium-size saucepan, bring stock or water to a boil.
- Add rice, stir once, reduce heat to low, cover, and simmer 35 minutes.
- Remove cover and add pine nuts and raisins. Stir gently to mix, replace cover, and cook another 10 minutes.
- Turn off heat and let rice stand, covered, until ready to serve.
