Assemble these supplies:
- 2 tablespoons olive oil 1 cup
- uncooked rice
- 1/2 cup onion, chopped
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 teaspoon oregano
- 1 3/4 cups water
- 2 beef bouillon cubes
- 1 tablespoon olive oil
- 1/3 cup almonds, blanched and slivered
- 1 tablespoon parsley, chopped
Steps in preparation:
- Heat 2 tablespoons olive oil in a 2-quart saucepan. Add rice. Stir constantly until rice is golden brown.
- Add onion, salt, pepper, oregano, water, and bouillon cubes. When cubes are dissolved, cover and simmer over low heat 20 minutes or until rice is tender and liquid is absorbed.
- Heat 1 tablespoon olive oil in a small saucepan. Stir in almonds and saute until lightly browned. Stir almonds and parsley into rice.
- SERVES 6.
