HOLLANDAISE SAUCE




Assemble these supplies:

  • 2 egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup ( 1 stick) butter, cut into 3 chunks

Steps in preparation:

  1. Mix egg yolks and lemon juice in a small saucepan until smooth. 
  2. Over low heat, add butter, 1 piece at a time, stirring constantly until butter has melted. 
  3. Continue stirring until mixture thickens. 
  4. Makes 4 servings.
